Thaw frozen legs completely. Break at the joints. Use a scissors to cut down both sides of each shell. Lift off and discard the upper half, leaving the meat on the lower half. For 1½ pounds crab legs, melt ¼ cup butter and stir in 2 tablespoons lemon juice and ½ teaspoon dry tarragon. Arrange crab legs, shell side down in a shallow baking dish and brush generously with butter mixture. Broil 5 to 6 inches from heat just until hot (4 to 5 minutes).

King crab is harvested from the cold rough waters of Alaska all the way to Russia. The harsh conditions of the northern waters require sturdy steel-hulled vessels of 100 feet or more from which the crabs are landed in large steel baited pots. Only live crabs are accepted at the shore plants and these are cooked and frozen immediately. While the average crab sold is 6 pounds, the largest King crab on record was caught off Alaska’s Kodiak Island weighing 25 pounds with a leg span of 6 feet! Sold as frozen cooked legs, and frozen cooked and scored jumbo broiler claws.
