Also called Red, Blueback or Quinalt, it is harvested from the Columbia River to Bristol Bay. It is often named for the river of origin (Alaska's Copper River). Sockeye's culinary prestige approaches that of king salmon. High in oil content, sockeyes have the reddest flesh of any salmon. Sockeyes are not farmed, so they're available fresh only in the summer. The firm texture makes an ideal canned product. Much of the U.S. commercial catch is exported to Japan where it is a favorite.

Salmon With Peach Salsa

Prep Time: 10 Minutes     Cook Time: 10 Minutes
Ingredients
1 lb Salmon Fillets
1 tsp. (5ml) lemon pepper, divided
1 cup (250ml) chopped fresh or thawed frozen peaches
1/3 cup (75ml) chopped cucumber
1 tbsp. (15ml) chopped fresh cilantro
Directions
Preheat grill to medium(300°F to 350°F), or preheat broiler
Cut fillets into 4 serving-size pieces.
Season with 1/2 teaspoon of lemon pepper.
Grill fillets 5 minutes per 1/2 inch thickness, turning once, or until fish flakes easily with a fork
Or broil on a greased unheated rack of broiler pan 4 inches from heat, 5 minutes per 1/2 inch thickness turning once.
For salsa, combine peaches, cucumber, cilantro and remaining 1/2 teaspoon lemon pepper.
Serve grilled salmon topped with peach salsa
Serves 4
